It was found that Curdlan Gum had been used to replace fish paste for many Kanto cooking ingredients in Taiwan.  Curdlan Gum is mainly used for vegetarian products, but recently it was discovered that the Gum was added to many hot pot materials to reduce the costs.  Many shops reduce the amount of cornstarch and fish paste, and use Curdlan Gum to increase the bounciness and crunchiness of the food.  It is also used to make fake sea cucumber and abalone.
